This wine displays a noble rot (botrytis) character as it is made from grapes infected by botrytis cinerea, which is dependent on favourable conditions (warm, misty autumn weather). This fungus attacks the skins and withers the berries, evaporating much of the juice, resulting in concentrated sweetness and flavour. Yields of this precious essence are low. A blend of Chenin blanc and Muscat de Frontignan balanced by a good acidity, this sweet dessert wine is excellent as an aperitif with a terrine or pâté, or after a meal with cheese and preserved fruit.
